Yellow pepper, or aji amarillo, is native to South and Central America and has been cultivated for more than 7,000 years.

Peru and Bolivia form one of the great centers of capsicum diversity. In pre-Inca Peru, peppers were present in food, art and religious life.

Cultivation follows Peru’s coast from Piura and Lambayeque through Lima, Ica, Arequipa, Moquegua and Tacna, where mild temperatures support the crop.
